Tucked inside a bijoux space on On Lan Street, a premium address in Hong Kong’s central, is Ryota Kapou Modern. Designed by Louie Shum and his team at House of Beast, they have successfully avoided all the usual design tropes of a what we’ve come to expect from Japanese restaurants
